Do these 2 concepts work together?

Pages as categories and the category tree from mbi_products_categories.

You can use your products on different pages. This makes sense. However
at the moment you have to choose between pages as categories, using the
category field or using mbi_products_categories.
Some coding would have to be done to merge those categories. In the
single view you can already get the page as category together with the
category field.

if I use only the mbi_products_categories, but distribute the categories
on different folder, that should result in the same?

You can limit the usable categories from the (enhanced)
mbi_products_categories by making use of the pid. I hope this works.
For the backend:
You must set useStoragePid in the EM.
Then you can select the 'General record storage page' from the uppermost
page to limit the shown categories to only those pages.
